Chicken Soup for the Soul


4-5 pounds of a young chicken
carrots {4-5}, cut into little pieces
celery {4-5}, cut into little pieces
onion {whole}
salt
pepper
thin pasta noodles

Cut out the fat and empty the inside of the chicken. 
Put all the "goodies" in a big pot of un-salted water. 
Salt and pepper the chicken. 
Add the whole chicken to the pot.
Add carrots, celery, and whole onion to the pot.
Cover for 2.5 - 3 hours. 
Take the chicken out. De-skin. De-bone. Shred meat. 
Throw meat back into pot. 
Add thin pasta noodes for 3 minutes.
Serve hot.
